Buonamici:
Meatballs , 2 lb
Apricot, 1 c
Dry Apricots, diced, 1/2 lb
Hoisin Sauce, 1/2 c
Rice Vinegar, 1/2 c
Cayenne Pepper, 1/8 tsp
Green Bell Pepper, diced, 1
Red Bell Pepper, diced, 1
Salt & Pepper
Combine apricot preserves, hoisin sauce, vinegar and cayenne pepper in a large saucepan. Cook over medium heat until heated thoroughly, stirring occasionally. Heat meatballs as directed. Drain and add to mixture, then add peppers and apricots. Continue cooking over medium heat until peppers are cooked but firm. Serve with cocktail toothpicks.
